Description

Enjoy a delightful start to your day with this Savory Breakfast Bowl. Packed with crispy potatoes, savory sausages, and fresh veggies, this dish is easy to make and bursting with flavor, making it an ideal healthy meal. Perfect for brunch or a nutritious breakfast!

Ingredients

Scale
  • 2 tablespoons ghee or oil, divided
  • 4 oz baby red potatoes, quartered
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1 handful chopped kale
  • 1 tablespoon water
  • 3–4 oz ground pork sausage or any ground meat
  • 1 large egg
  • 1/4–1/2 avocado, sliced
  • lime juice, to taste
  • sea salt, to taste
  • scallions, thinly sliced
  • fresh salsa

Instructions

  1. Place the quartered potatoes in a microwave-safe bowl and microwave on high for 3 minutes to soften.
  2. Heat a medium skillet over medium-high heat and add the divided ghee or oil.
  3. Add the softened potatoes and season with sea salt, black pepper, smoked paprika, garlic powder, and chili powder. Cook until browned and crispy, about 3 minutes.
  4. Remove the potatoes with a slotted spoon and keep warm under aluminum foil.
  5. In the same skillet, add a bit more ghee, then add the chopped kale and water. Cover to wilt. Uncover and cook until it reaches the desired consistency. Season with sea salt and pepper, then transfer to the bowl with the potatoes.
  6. Add the ground sausage or other ground meat to the skillet and cook until browned, about 2 minutes. Add this to the bowl with the potatoes and kale, keeping them warm.
  7. Adjust the heat to medium and add the last tablespoon of ghee to the skillet for frying the egg. Cook the egg to your preference, either sunny side up or flipped.
  8. Top the warm bowl with the fried egg, avocado slices drizzled with lime juice and sea salt, scallions, and fresh salsa. Serve immediately.

Notes

Feel free to swap out the ground meat for your preferred option, such as turkey or beef.
Adjust the seasoning based on your taste for extra flavor.
For a vegetarian option, omit the meat and increase the veggies or add beans.
