- 3 tbsp avocado, canola, or vegetable oil for cooking
- 2 cups shredded zucchini – squeezed (2 large zucchini, around 1.5 lbs)
- 1 cup panko bread crumbs
- 2 eggs
- 1/3 cup fresh grated parmesan cheese
- 1/4 cup finely shredded mozzarella cheese
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp fresh cracked black pepper
Instructions
- Grate the zucchini using a box grater and transfer it to a mesh bag or cheese cloth. Squeeze out as much liquid as possible to avoid soggy fritters.
- In a mixing bowl, combine the squeezed zucchini with all the remaining ingredients. Mix well until everything is thoroughly combined.
- Preheat a large pan over medium heat and lower the temperature slightly. Add oil and scoop out even amounts of the zucchini mixture into the pan, shaping them gently into fritters.
- Cook each fritter for 4-6 minutes on each side. Avoid disturbing them until it’s time to flip to ensure they hold together properly.
- If making multiple batches, add more oil to the pan as necessary.
Notes
Ensure that the zucchini is well-squeezed to prevent excess moisture.
Cook fritters on medium to medium-low heat for best results.
Only flip the fritters once to avoid breaking them apart.
