Ingredients

Scale
  • 6 cups washed baby spinach
  • 4 cups cubed watermelon
  • ¼ red onion – thinly sliced
  • 1 cup feta cheese
  • ½ cup cherry tomatoes
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ cup balsamic vinegar
  • ½ cup extra virgin olive oil
  • 1 tablespoon dijon mustard
  • 1 teaspoon honey
  • 1 large clove garlic (grated)

Instructions

  1. Wash and dry the spinach, then place it in a large bowl or on a platter.
  2. Top with watermelon, cherry tomatoes, red onion, and feta cheese; then sprinkle with salt and pepper.
  3. Drizzle with balsamic dressing and serve.

Notes

For added crunch, consider including some toasted nuts.
This salad can be made a few hours ahead; just wait to add the dressing until serving.
Feel free to replace feta with goat cheese for a different flavor.
