Description

These Ultimate Reese’s Peanut Butter Cookies shine with their delightful flavor, simple preparation, and the irresistible combination of peanut butter and chocolate. Perfect for a quick treat or a homemade gift.


Ingredients

  • 1 cup (267g) peanut butter
  • 1 large egg
  • 1 cup (200g) sugar
  • 1 teaspoon baking soda
  • ½ cup (100g) reese’s pieces
  • 1 cup (136g) finely chopped reese’s peanut butter cups

Instructions

  1. Preheat the oven to 350°F and prepare two cookie sheets with Silpats or parchment paper.
  2. In a large bowl, combine peanut butter, egg, sugars, and baking soda. You can mix this by hand if preferred.
  3. Once mixed, fold in Reese’s Pieces and chopped peanut butter cups.
  4. Using a 2 tablespoon cookie scoop, place dough balls on the cookie sheets, and gently flatten each using a fork.
  5. Bake for 8 minutes and allow to cool for 15 minutes before transferring from the sheets.

Notes

Handle the cookies gently as they can be crumbly after baking.
If using a mixer, ensure all ingredients are well combined before adding the Reese’s Pieces.
For extra stability, consider adding the optional baking soda.
