- 1 cup (267g) peanut butter
- 1 large egg
- 1 cup (200g) sugar
- 1 teaspoon baking soda
- ½ cup (100g) reese’s pieces
- 1 cup (136g) finely chopped reese’s peanut butter cups
Instructions
- Preheat the oven to 350°F and prepare two cookie sheets with Silpats or parchment paper.
- In a large bowl, combine peanut butter, egg, sugars, and baking soda. You can mix this by hand if preferred.
- Once mixed, fold in Reese’s Pieces and chopped peanut butter cups.
- Using a 2 tablespoon cookie scoop, place dough balls on the cookie sheets, and gently flatten each using a fork.
- Bake for 8 minutes and allow to cool for 15 minutes before transferring from the sheets.
Notes
Handle the cookies gently as they can be crumbly after baking.
If using a mixer, ensure all ingredients are well combined before adding the Reese’s Pieces.
For extra stability, consider adding the optional baking soda.
