Description

Ingredients

  • 2 lbs russet potatoes
  • 1 cup sour cream
  • 1/2 cup cream cheese
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/4 cup green onions, chopped
  • 1/2 cup bacon bits
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and peel the potatoes, then cut them into chunks.
  3. Boil the potatoes in salted water until tender, about 15 minutes.
  4. Drain the potatoes and transfer them to a large mixing bowl.
  5. Add sour cream, cream cheese, cheddar cheese, milk, green onions, and bacon bits to the bowl with the potatoes.
  6. Mash the mixture until creamy and combined, seasoning with salt and pepper to taste.
  7. Transfer the mixture into a greased baking dish, smoothing the top with a spatula.
  8. Sprinkle additional cheddar cheese on top if desired.
  9. Bake in the preheated oven for about 30 minutes, or until the top is golden and bubbly.

Notes
