Description

This Tiramisu Cake (Light & Fluffy) is a delight with its irresistible flavor, featuring layers of creamy mascarpone and rich coffee. Perfect for gatherings and special occasions, it’s simple to make and utterly delicious!


Ingredients

  • 6 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 4 ounces cream cheese (room temperature)
  • 4 ounces mascarpone cheese (cold)
  • 1 cup butter (room temperature, 2 sticks)
  • 5 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup strongly brewed coffee or espresso
  • 1/4 cup unsweetened cocoa powder (for garnish)

Instructions

  1. Preheat the oven to 350°F and prepare three 6-inch round cake pans by greasing the bottoms with nonstick baking spray and lining them with parchment paper.
  2. In a stand mixer, beat the eggs on medium-high speed while gradually adding the granulated sugar until the mixture reaches the ribbon stage, about 5-8 minutes.
  3. Sift together the flour, baking powder, and cinnamon, then gently fold into the egg mixture with a spatula.
  4. Distribute the batter evenly among the cake pans and bake for 15-18 minutes, or until a toothpick comes out clean.
  5. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  6. (Optional) For a firmer cake, wrap the cooled layers in plastic wrap and freeze for at least 4 hours before assembling.
  7. For the frosting, mix cream cheese, mascarpone, and butter in a stand mixer until smooth, then gradually add powdered sugar while mixing on low speed.
  8. Add vanilla extract, increase speed to high, and beat until the frosting is light and fluffy, about 2-3 minutes.
  9. After the cakes have cooled, brush the top of each layer with strongly brewed espresso.
  10. Assemble the cake by placing the bottom layer on a stand, spreading frosting on top, and repeating with the second layer before adding the top layer with espresso side down.
  11. Spread the remaining frosting on top and around the sides, then decorate if desired.
  12. Sift cocoa powder over the top, loosely cover with plastic wrap, and refrigerate for 4 hours (or up to 3 days). Serve chilled.

Notes

This cake can be made ahead of time and stored in the refrigerator until ready to serve.
For a richer coffee flavor, adjust the amount of espresso brushed on the cake layers as preferred.
Feel free to add chocolate shavings or coffee beans on top for extra decoration.
