Ingredients
Scale
- 6 large eggs (room temperature)
- 1 cup granulated sugar
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 4 ounces cream cheese (room temperature)
- 4 ounces mascarpone cheese (cold)
- 1 cup butter (room temperature, 2 sticks)
- 5 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strongly brewed coffee or espresso
- 1/4 cup unsweetened cocoa powder (for garnish)
Instructions
- Preheat the oven to 350°F and prepare three 6-inch round cake pans by greasing the bottoms with nonstick baking spray and lining them with parchment paper.
- In a stand mixer, beat the eggs on medium-high speed while gradually adding the granulated sugar until the mixture reaches the ribbon stage, about 5-8 minutes.
- Sift together the flour, baking powder, and cinnamon, then gently fold into the egg mixture with a spatula.
- Distribute the batter evenly among the cake pans and bake for 15-18 minutes, or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- (Optional) For a firmer cake, wrap the cooled layers in plastic wrap and freeze for at least 4 hours before assembling.
- For the frosting, mix cream cheese, mascarpone, and butter in a stand mixer until smooth, then gradually add powdered sugar while mixing on low speed.
- Add vanilla extract, increase speed to high, and beat until the frosting is light and fluffy, about 2-3 minutes.
- After the cakes have cooled, brush the top of each layer with strongly brewed espresso.
- Assemble the cake by placing the bottom layer on a stand, spreading frosting on top, and repeating with the second layer before adding the top layer with espresso side down.
- Spread the remaining frosting on top and around the sides, then decorate if desired.
- Sift cocoa powder over the top, loosely cover with plastic wrap, and refrigerate for 4 hours (or up to 3 days). Serve chilled.
Notes
This cake can be made ahead of time and stored in the refrigerator until ready to serve.
For a richer coffee flavor, adjust the amount of espresso brushed on the cake layers as preferred.
Feel free to add chocolate shavings or coffee beans on top for extra decoration.
