- 2 salmon fillets
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 cup snap peas
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon sesame oil
- 1 tablespoon minced garlic
- 2 teaspoons cornstarch
- 2 tablespoons water
- 2 green onions, sliced
Instructions
- Heat sesame oil in a large pan over medium heat.
- Add minced garlic and sauté until fragrant.
- Place salmon fillets in the pan and cook until golden brown on both sides, about 4-5 minutes per side.
- Remove salmon and set aside.
- In the same pan, add broccoli, red bell pepper, and snap peas, sautéing for 3-4 minutes until vegetables are tender-crisp.
- In a small bowl, mix soy sauce, honey, cornstarch, and water to create a sauce.
- Pour sauce over the vegetables in the pan and stir until thickened.
- Return the salmon to the pan, flip to coat in sauce and heat through for another minute.
- Serve hot, garnished with sliced green onions.
Notes
For a spicier dish, add a pinch of red pepper flakes to the sauce.
Feel free to substitute the salmon with chicken or tofu for a different protein.
Serve over rice or quinoa for a complete meal.
