Ingredients

Scale
  • 2 salmon fillets
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • 2 green onions, sliced

Instructions

  1. Heat sesame oil in a large pan over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Place salmon fillets in the pan and cook until golden brown on both sides, about 4-5 minutes per side.
  4. Remove salmon and set aside.
  5. In the same pan, add broccoli, red bell pepper, and snap peas, sautéing for 3-4 minutes until vegetables are tender-crisp.
  6. In a small bowl, mix soy sauce, honey, cornstarch, and water to create a sauce.
  7. Pour sauce over the vegetables in the pan and stir until thickened.
  8. Return the salmon to the pan, flip to coat in sauce and heat through for another minute.
  9. Serve hot, garnished with sliced green onions.

Notes

For a spicier dish, add a pinch of red pepper flakes to the sauce.
Feel free to substitute the salmon with chicken or tofu for a different protein.
Serve over rice or quinoa for a complete meal.
