Description
This delightful pumpkin pie features a flaky crust and a creamy filling made from pumpkin puree, eggs, and warm spices. Perfect for holidays or a cozy dessert at home, it’s easy to make and full of flavor that everyone will enjoy.
Ingredients
Scale
- 1¼ cups all-purpose flour
- 1/2 teaspoon salt
- 4 ounces Crisco
- 1/8 cup cold water
- 15 ounces pumpkin puree
- 12 ounces evaporated milk
- 3/4 cup light brown sugar
- 1½ teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 2 large eggs
Instructions
- In a large mixing bowl, mix the flour, salt, and Crisco with your fingers until the texture resembles coarse meal. Make a well in the center and add the cold water.
- Gently mix the sides of the flour mixture with the water until fully combined and moistened. Form the dough into a disc, wrap it in plastic, and refrigerate for 30 minutes to 1 hour.
- After resting, place the dough on a lightly floured surface. Roll it out into a circle about 1/4" thick and large enough to overhang your pie plate by 1/2".
- Transfer the rolled dough to a 9" pie plate, cut off the excess, tuck under the edges for a smooth finish, and crimp the edge decoratively.
Notes
Chill the dough for best results before rolling it out.
Feel free to add a pinch of nutmeg for an extra spice kick.
Make sure to use cold water to ensure a flaky crust.
