Description

This Sushi Bowl combines delicious flavors with simple prep, featuring sushi rice, creamy mayonnaise, fresh veggies, and imitation crab. Perfect for a quick dinner or a healthy meal!


Ingredients

  • 2 cups sushi rice rinsed until the water runs clear
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons sriracha sauce
  • 1 garlic clove finely minced or pressed
  • 16 ounces imitation crab meat
  • 1 avocado cut into slices
  • 1 cup shelled edamame
  • 2 carrots peeled and cut into match sticks
  • 4 mini cucumbers sliced thin
  • .35 ounce roasted seaweed
  • 2 teaspoons sesame seeds

Instructions

  1. Bring sushi rice and water to a boil in a pot.
  2. Reduce heat, cover, and simmer for 20 minutes.
  3. In a separate bowl, combine rice vinegar, sugar, and kosher salt; stir until dissolved.
  4. Once rice is cooked, mix the vinegar mixture into the rice, ensuring it's well combined.

Notes

Rinse sushi rice until clear to remove excess starch for better texture.
Adjust the amount of sriracha for desired spiciness.
Substitute imitation crab with real crab or shrimp if preferred.
