Description

Sugar Cookie Fruit Pizzas are a delightful treat featuring buttery cookies topped with creamy frosting and fresh fruits. Perfect for gatherings or a sweet dessert!


Ingredients

  • 1 cup salted butter
  • 1½ cups granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon almond extract
  • 2¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 4 ounces cream cheese
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat oven to 375°F and line 2 baking sheets with parchment paper.
  2. In a stand mixer, combine the butter and sugar, then beat until light and fluffy, about 3 minutes.
  3. Add the egg, egg yolk, vanilla, and almond extract; mix on low until smooth, about 30 seconds.
  4. Gradually add baking soda, salt, and flour, mixing until well combined.
  5. Scoop dough into large balls using a ¼ cup cookie scoop, placing 6-7 on each baking sheet.
  6. Bake cookies for 11-14 minutes until lightly golden around the edges. Avoid overbaking for the best chewy texture.
  7. In a bowl, beat cream cheese and butter until smooth, then mix in vanilla, pinch of salt, and powdered sugar.
  8. Spread frosting over each cookie and top with diced fresh fruit.

Notes

Make sure the butter is at room temperature for easier mixing.
You can mix and match fruits based on seasonal availability.
Store leftovers in an airtight container in the fridge.
