Description

These delightful Strawberry Swirl Marshmallows offer a sweet and fluffy bite, perfect for any occasion. Made with fresh strawberry extract and jello, they are simple to prepare and sure to impress anyone looking for homemade treats!


Ingredients

  • 1/4 cup powdered sugar
  • 2 tablespoons cornstarch
  • 2 packets of unflavored gelatin
  • 1 cup water divided
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 3 ounces strawberry jello
  • 3 teaspoons strawberry extract
  • 2 drops red gel food coloring

Instructions

  • In a small bowl, combine the unflavored gelatin with 1/2 cup of water. Allow it to bloom.
  • In a large saucepan, mix the granulated sugar, light corn syrup, remaining 1/2 cup water, and salt. Heat over medium until reaching 240°F.
  • Stir in the strawberry jello, mixing well until combined.
  • Transfer the bloomed gelatin into a stand mixer bowl and slowly pour in the hot sugar mixture to dissolve it.
  • Using the whisk attachment, whip the mixture for 8 to 10 minutes until it becomes fluffy and stiff.
  • Prepare an 8×8 inch square pan by lightly spraying it with nonstick baking spray.
  • In a small bowl, mix the powdered sugar and cornstarch, setting aside half for later use.
  • Dust the bottom of the prepared pan with the powdered sugar and cornstarch mix.
  • In the last minute of mixing, add the strawberry extract and food coloring, continuing to beat.
  • Pour the marshmallow mixture into the dusted pan.
  • For a red swirl effect, apply an additional 1 to 2 drops of food coloring on each side and swirl with a skewer.
  • Dust the top of the marshmallows with the reserved powdered sugar and cornstarch mixture, ensuring full coverage.
  • Allow the marshmallows to rest for at least 4 hours, preferably overnight, to firm up.
  • Cut into 12 pieces using a sharp knife or pizza cutter; dust the knife with powdered sugar to prevent sticking.
  • Coat the marshmallows in additional powdered sugar to keep them from being sticky.

Notes

Ensure the gelatin is fully bloomed before mixing.
Dusting with powdered sugar helps prevent the marshmallows from becoming sticky.
Allowing the marshmallows to rest longer improves their texture.
