Description

These Strawberry Lemon Scones feature a delightful blend of sweet strawberries and zesty lemon, making them an irresistible treat. They’re easy to prepare and perfect for enjoying with your morning coffee or as a tasty snack anytime!


Ingredients

  • 11 1/2 cups Powdered Sugar
  • 23 tbsp lemon juice
  • 1 tsp lemon zest, optional
  • 2 cups + 2 tbsp flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp lemon zest
  • 1/2 cup butter, cold & cubed
  • 1 egg
  • 1/4 cup heavy whipping cream
  • 1/4 cup sour cream
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla
  • 3/4 cup strawberries, diced

Instructions

  1. Preheat the oven to 400 degrees F and line a baking sheet with parchment paper.
  2. In a large bowl, combine the flour, sugar, baking powder, salt, and lemon zest.
  3. Cut in the cold cubed butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the egg, heavy cream, sour cream, lemon juice, and vanilla until just combined.
  5. Gently fold in the diced strawberries.
  6. Turn the dough out onto a floured surface and pat it into a 1" thick circle.
  7. Cut the dough into 8 triangles.
  8. Brush the tops of the scones with a bit of heavy cream.
  9. Bake for 15 minutes or until golden brown.
  10. While cooling, whisk together powdered sugar, lemon juice, and lemon zest to create a glaze. Adjust consistency with additional sugar or juice as needed.
  11. Drizzle the glaze over the scones.

Notes

For an extra lemony flavor, add more lemon zest to the dough or glaze.
Make sure the butter is cold to create flaky scones.
Store leftover scones in an airtight container at room temperature for up to 2 days.
