Description

These Strawberry Crunch Cheesecake Brownies offer a delightful blend of flavors with creamy cheesecake and a fruity, crunchy topping. Perfect for dessert enthusiasts, they are simple to prepare and great for sharing at gatherings or enjoying as a special treat at home.

  • 1 (8 oz) cream cheese, softened
  • 1/4 cup butter, softened
  • 1 tsp vanilla
  • 1/2 cup powdered sugar
  • 12 tbsp heavy whipping cream
  • 20 golden oreos, about 1/2 package
  • 4 tbsp butter, melted
  • 4 tbsp strawberry jello gelatin
  • 1 box strawberry cake mix
  • 1/2 cup butter, melted
  • 2 eggs
  • 2 tbsp strawberry jello gelatin

Instructions

  1. Preheat the oven to 350 degrees F. Spray an 8 x 8 pan with non-stick spray and set aside.
  2. In a large bowl, combine strawberry cake mix, melted butter, eggs, and strawberry gelatin to create the brownie layer.
  3. Spread the batter evenly into the prepared pan and bake for 25 minutes. Allow to cool completely.
  4. Once the brownie layer is cooled, prepare the cheesecake layer by beating softened cream cheese, softened butter, and vanilla until smooth. Add powdered sugar and heavy whipping cream, beating until fluffy.
  5. Spread the cheesecake mixture evenly over the cooled brownie layer.
  6. In a food processor, pulse Oreos until broken into pieces, keeping some larger chunks.
  7. Sprinkle the remaining strawberry gelatin over the cookie crumbs and drizzle with melted butter. Pulse a few more times to combine.
  8. Sprinkle and press the cookie crumb mixture over the cheesecake layer.

Notes

Ensure the cream cheese and butter are softened for easy blending.
Allow brownies to cool completely before layering to maintain structure.
To enhance flavor, consider adding fresh strawberries on top before serving.
