- 1/4 cup avocado oil
- 3 tablespoons lime juice
- 1 tablespoon garlic, minced
- 2 tablespoons light brown sugar
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne powder
- 1 each chili in adobo sauce, seeds removed and minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 whole lime
Instructions
- Trim any excess fat or tendons from the chicken breasts.
- Place the chicken in a freezer bag or between two sheets of plastic wrap.
- Using a meat tenderizer, rolling pin, or the bottom of a mason jar, gently pound the thickest parts of the chicken.
- In a small bowl, mix together the avocado oil, lime juice, garlic, brown sugar, chili powder, cumin, cayenne, and minced chili in adobo sauce until well combined.
- Pour the marinade over the chicken in the freezer bag or in a large bowl, ensuring it's coated evenly.
- Refrigerate the marinated chicken for at least 2 hours, or up to 24 hours for deeper flavor.
Notes
For an extra kick, add more cayenne or chili in adobo sauce to the marinade.
Serve the chicken with lime wedges for added zest.
