- 2.5 lbs boneless skinless chicken thighs
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 tsp italian seasoning
- 1/2 tsp paprika
- 4 garlic cloves, minced
- 2/3 cup sun-dried tomatoes, roughly chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tbsp cornstarch
- 3/4 cup grated parmesan
- 5 oz fresh baby spinach
Instructions
- Place the chicken in the slow cooker, seasoning both sides with salt, pepper, italian seasoning, and paprika.
- Add the minced garlic, sun-dried tomatoes, and chicken broth around the chicken, stirring gently to coat.
- Cover and cook on HIGH for 3 hours or LOW for 6 hours until the chicken reaches an internal temperature of 175°F for thighs.
- Combine the heavy cream and cornstarch. Remove the lid and stir in this mixture along with the parmesan.
- Add spinach in handfuls, covering and letting it wilt for 5 to 10 minutes before adjusting salt to taste.
- Serve over pasta, rice, or orzo, generously spooning the sauce over the top.
