Description

This Simple Tomato Salad is a burst of fresh flavors. With ripe seasonal tomatoes, fragrant basil, and a zingy dressing, it’s a quick and healthy side dish for any meal.


Ingredients

  • 2 to 3 pounds mixed tomatoes
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup shallot, thinly sliced
  • ½ teaspoon garlic, minced
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dijon mustard
  • ¼ cup extra-virgin olive oil
  • ⅓ cup fresh basil leaves, loosely packed, torn

Instructions

  1. Cut large tomatoes into wedges and halve smaller tomatoes. Place in a large bowl.
  2. Sprinkle with salt and toss gently. Let the mixture sit for 10 to 15 minutes.
  3. Add black pepper, shallot, garlic, red wine vinegar, lemon juice, and Dijon mustard to the bowl. Stir gently.
  4. Slowly drizzle in olive oil while tossing to coat the mixture evenly.
  5. Add torn basil leaves and mix gently. Adjust seasoning with salt and pepper if needed.
  6. Allow the salad to sit for another 10 to 15 minutes at room temperature for flavor development.
  7. Before serving, finish with a pinch of kosher salt and extra black pepper.
