- 2 to 3 pounds mixed tomatoes
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ¼ cup shallot, thinly sliced
- ½ teaspoon garlic, minced
- 2 tablespoons red wine vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon dijon mustard
- ¼ cup extra-virgin olive oil
- ⅓ cup fresh basil leaves, loosely packed, torn
Instructions
- Cut large tomatoes into wedges and halve smaller tomatoes. Place in a large bowl.
- Sprinkle with salt and toss gently. Let the mixture sit for 10 to 15 minutes.
- Add black pepper, shallot, garlic, red wine vinegar, lemon juice, and Dijon mustard to the bowl. Stir gently.
- Slowly drizzle in olive oil while tossing to coat the mixture evenly.
- Add torn basil leaves and mix gently. Adjust seasoning with salt and pepper if needed.
- Allow the salad to sit for another 10 to 15 minutes at room temperature for flavor development.
- Before serving, finish with a pinch of kosher salt and extra black pepper.
