Description

Ingredients

  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat the oven to 350 degrees and prepare a pie pan with non-stick spray.
  2. Pit, peel, and slice peaches to fill 5 cups, and place them in a medium bowl.
  3. Mix in sugar, cornstarch, vanilla, and lemon juice with the peaches.
  4. Transfer the peach mixture into the prepared pie pan.
  5. In a food processor, pulse together flour, brown sugar, and cinnamon. Add cold, cubed butter until crumbly, then mix in old-fashioned rolled oats gently.
  6. Spread the oat mixture over the peaches in the pan.
  7. Bake for 30-35 minutes, or until the topping is golden brown.

Notes

For added flavor, consider using ripe peaches.
Serve warm with ice cream for a delightful treat.
Make sure butter is cold for a flaky topping.
