Description

Sausage Stuffed Zucchini Boats offer a delightful blend of flavors with Italian sausage, marinara sauce, and gooey mozzarella. Perfect for a quick and healthy dinner, this dish is both easy to prepare and satisfying, making it ideal for families seeking delicious homemade meals.


Ingredients

  • 3 medium zucchini
  • 1 lb ground italian sausage, mild or hot
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, as needed

Instructions

  1. Preheat your oven to 375°F and line a large baking pan with foil or parchment paper.
  2. Slice the zucchini in half lengthwise and scoop out the insides with a spoon. Chop the zucchini flesh and set it aside.
  3. In a large skillet over medium-high heat, cook the sausage for about 3-4 minutes until browned.
  4. Add the chopped onion, minced garlic, and the chopped zucchini to the skillet; cook until the sausage is thoroughly cooked and veggies have softened after another 3-4 minutes.
  5. Mix in the marinara sauce and combine well.
  6. Place the zucchini boats on the prepared baking pan, season with salt and pepper, then fill each with the sausage mixture and top with mozzarella cheese.
  7. Bake for 15-20 minutes or until the cheese is melted and bubbly, and ensure the zucchini is tender. Adjust cooking time if using larger or thicker zucchini.
  8. Serve warm and enjoy, storing any leftovers in the fridge.

Notes

Feel free to use spicy sausage for an added kick.
You can substitute the marinara with your favorite pasta sauce for a different flavor profile.
For a lighter option, swap mozzarella with a low-fat cheese.
