- 2 lbs boneless, skinless chicken breast
- 10 ounces rotel tomatoes with green chiles, drained
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ¾ cup shredded cheddar cheese
- freshly chopped cilantro
- freshly chopped green onions
Instructions
- Preheat the oven to 400˚F.
- Combine salt, garlic powder, cumin, and chili powder. Season both sides of the chicken breast and place in a large casserole dish.
- Drain the rotel tomatoes and spoon them over the chicken breasts to cover evenly. Top with shredded cheddar cheese.
- Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes or until the chicken reaches an internal temperature of 165˚F.
- Top with freshly chopped cilantro or green onions before serving warm.
Notes
For added flavor, marinate the chicken in the spice mix for an hour before cooking.
Feel free to swap the cheddar cheese with pepper jack for a spicier kick.
