- 3 eggs (~55g/2 oz each)
- 125g / 4.5 oz dark cooking chocolate , bittersweet / 70% cocoa
- 10g / 0.3 oz unsalted butter
- 1/2 cup cream , full fat
- 3 tbsp caster sugar (superfine white sugar)

Instructions
- Work at a steady pace to keep your whipped egg whites and cream from warming too much.
- Separate the eggs while they’re cold. Place the egg whites in a large bowl and yolks in a small bowl. Let the whites rest while preparing other ingredients.
- Whisk the yolks until uniform.
- In a microwave-proof bowl, break the chocolate into pieces and add butter. Melt together in the microwave using 30-second bursts, stirring in between, until smooth and combined. Allow to cool slightly.
- Beat the cream until stiff peaks form, being cautious not to over-whip it.
- Add sugar to the egg whites and beat until firm peaks form.
Notes
It’s essential to keep the utensils and bowls cool when whipping; warm tools can reduce the volume of your egg whites and cream.
Feel free to experiment with flavors by adding liqueurs or extracts to the melted chocolate before blending.
