Description

These Red, White, and Blue Tortilla Cups are a delightful treat featuring crispy tortilla shells filled with fluffy whipped cream and topped with fresh berries. Perfect for a quick dessert or snack, this easy recipe combines flavor and fun, making it ideal for gatherings or a sweet family treat.


Ingredients

  • 3 small flour tortillas
  • 2 tbsp. coconut oil, melted
  • 1 tbsp. honey
  • 1 tsp. ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp. natural sweetener like Truvia
  • 1 tsp. vanilla
  • 1 cup fresh berries like blueberries, raspberries, and strawberries
  • Optional: cocoa powder

Instructions

  1. Preheat oven to 375 degrees F.
  2. Cut the tortillas into quarters using a pizza slicer.
  3. In a small bowl, combine the melted coconut oil and honey until well mixed.
  4. Brush each side of the tortilla with the coconut oil mixture and sprinkle with cinnamon.
  5. Press three tortilla triangles into a muffin pan to create cups.
  6. Bake in the oven for 15 minutes, then remove and allow to cool.
  7. In a mixing bowl, combine whipping cream, sweetener, and vanilla. Beat until small peaks form.
  8. Spoon or pipe the whipped cream into each cooled tortilla cup.
  9. Top the whipped cream with assorted fresh berries.
  10. If desired, sprinkle cocoa powder on top of the berries.

Notes

Feel free to use any combination of fresh berries to suit your taste.
The tortilla cups can be made a day in advance, just store them in an airtight container until you are ready to fill them.
