- 3 small flour tortillas
- 2 tbsp. coconut oil, melted
- 1 tbsp. honey
- 1 tsp. ground cinnamon
- 1 cup whipping cream
- 1/2 tsp. natural sweetener like Truvia
- 1 tsp. vanilla
- 1 cup fresh berries like blueberries, raspberries, and strawberries
- Optional: cocoa powder
Instructions
- Preheat oven to 375 degrees F.
- Cut the tortillas into quarters using a pizza slicer.
- In a small bowl, combine the melted coconut oil and honey until well mixed.
- Brush each side of the tortilla with the coconut oil mixture and sprinkle with cinnamon.
- Press three tortilla triangles into a muffin pan to create cups.
- Bake in the oven for 15 minutes, then remove and allow to cool.
- In a mixing bowl, combine whipping cream, sweetener, and vanilla. Beat until small peaks form.
- Spoon or pipe the whipped cream into each cooled tortilla cup.
- Top the whipped cream with assorted fresh berries.
- If desired, sprinkle cocoa powder on top of the berries.
Notes
Feel free to use any combination of fresh berries to suit your taste.
The tortilla cups can be made a day in advance, just store them in an airtight container until you are ready to fill them.
