- 30 Oreo cookies
- 4 Tablespoons unsalted butter, melted
- 3 – 8 ounce packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 1/4 cup sour cream
- 2 teaspoons vanilla extract
- 1/4 cup all purpose flour
- 3 large eggs
- red & blue gel food colors
Instructions
- Preheat the oven to 325 degrees F and line a 9×13 inch pan with foil.
- Place the Oreo cookies (cream included) into a food processor and pulse until they turn into crumbs.
- Mix in the melted butter until combined. Firmly press this mixture into the bottom of the prepared pan. Bake for 10 minutes and let cool.
- Put a large baking sheet on the bottom rack of the oven and fill it halfway with water. Allow the oven to preheat again.
- Beat the cream cheese and granulated sugar in a bowl until creamy. Then add sour cream, vanilla extract, and all-purpose flour, mixing well.
- Incorporate the eggs, beating gently until just combined.
- Divide the cheesecake mixture into 3 bowls, tinting two of them with red and blue gel food colors.
- Alternately spoon the colored mixtures over the crust and swirl gently with a knife for a marbled effect. Be careful not to overmix.
- Position the pan above the water-filled baking sheet and bake for 45-50 minutes. Once done, immediately transfer to a wire rack.
- Let cool at room temperature for 1 hour, then refrigerate for 4-6 hours.
- Cut into squares and serve with whipped cream and sprinkles if desired.

Ensure the cream cheese is softened for easier mixing.
Refrigerating longer enhances the flavor and texture of the cheesecake bars.
