Description

These pumpkin truffles are a delightful treat combining the rich flavors of cream cheese and pumpkin puree, all coated in smooth white chocolate. Easy to make and perfect for gatherings, they showcase the warmth of fall in every bite.


Ingredients

  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/3 cup pumpkin puree
  • 1 ¾ cups finely ground graham cracker crumbs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 12 ounces white chocolate chips
  • optional: extra graham cracker crumbs or english toffee bits

Instructions

  1. In a bowl, combine the softened cream cheese and powdered sugar, beating until smooth and creamy.
  2. Mix in the pumpkin puree and cinnamon, combining until fully integrated.
  3. Add the graham cracker crumbs and pumpkin pie spice, mixing for 1-2 minutes until a thick dough forms.
  4. Transfer the dough to a bowl, cover, and refrigerate for about 2 hours.
  5. Line a baking sheet with parchment paper.
  6. Scoop tablespoons of dough, rolling them into 1” balls, and place them on the prepared baking sheet, spaced 2” apart.
  7. Chill the truffles for 20-25 minutes before dipping in chocolate.
  8. Melt the white chocolate chips in the microwave, stirring every 10-15 seconds until smooth, being careful not to overheat.
  9. Use a fork to dip each truffle into the melted chocolate, ensuring it is fully covered.
  10. Remove excess chocolate by scraping the fork against the bowl's edge before placing the truffle back on the parchment.
  11. Continue with the rest of the truffles, re-dipping any that need it after they harden.
  12. Immediately dust with graham cracker crumbs or toffee bits before they set completely.
  13. Return the truffles to the refrigerator until they are fully set. They can be kept at room temperature for a few hours before serving.

Notes

Refrigerating the dough helps it firm up, making rolling easier.
You can customize the topping by using different sprinkles or nuts.
These truffles can be stored in an airtight container for up to a week.
