- 3 tablespoons (45ml) heavy whipping cream
Instructions
- Preheat your oven to 350°F and prepare two cookie sheets with silpat liners or parchment paper.
- In a stand mixer fitted with a paddle attachment, cream together the butter and granulated sugar. Incorporate the egg and vanilla extract, followed by the pumpkin pie spice, baking soda, cream of tartar, and salt. Gradually mix in the flour until combined.
- Using a cookie scoop, portion out 2 tablespoons of the dough and place on the prepared cookie sheets.
- Bake in the oven for 9-10 minutes, watching for the bottoms to start turning golden. Remove them just before they turn too dark to maintain their pillow-like softness.
- Allow the cookies to cool for 5 minutes on the sheets before transferring them to a wire rack to cool completely.
- For the frosting, beat the softened butter until creamy, then mix in the salt. Gradually add the powdered sugar until you have a crumbly mixture, then include the vanilla, pumpkin spice, and 2 tablespoons of the heavy whipping cream. Mix until smooth, adding more cream as needed to achieve the desired consistency. Frost the cooled cookies.
- Store the frosted cookies at room temperature in a loosely covered container to keep the frosting from drying too much.
Notes

For a thicker frosting, reduce the amount of heavy whipping cream used.
