- 1 1/2 cup sugar
- 2 tsp pumpkin pie spice
- 2 tsp cinnamon
- 1 tsp cornstarch
- 3/4 cup apple juice
- 12 tbsp butter melted
- 1 cup sugar
- 1/4 cup molasses
- 1 egg
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1/4 tsp salt
- 3 cups flour
Instructions
- Prepare the pumpkin filling by whisking together canned pumpkin, 1½ cups sugar, pumpkin spice, and cinnamon in a medium saucepan.
- Stir cornstarch into apple juice until dissolved, then add to the saucepan and bring to a gentle boil, then simmer for 10 minutes before cooling.
- In a large mixing bowl, beat melted butter and 1 cup sugar with a hand mixer until thickened, then add molasses and egg, mixing until smooth.
- Incorporate baking soda, cinnamon, pumpkin pie spice, salt, and flour into the mixture, blending until a soft dough forms.
- Refrigerate the dough for 30 minutes, then roll it out to ¼ inch thickness and cut into pumpkin shapes, creating faces in half of them.
- Spoon cooled filling onto uncut cookies and place face cookies on top, pressing edges to seal.
- Transfer to a parchment-lined baking sheet and bake for 10–13 minutes, ensuring the centers bake through. Allow to cool before serving.

Ensure the filling is completely cooled before assembling cookies to prevent sogginess.
