  • 1/2 cup fall sprinkles

Instructions

  1. In a large bowl, combine the pumpkin puree, vegetable oil, granulated sugar, egg, and vanilla extract until mixed well.
  2. Stir in the baking soda, pumpkin pie spice, baking powder, kosher salt, and all-purpose flour until the mixture is just combined.
  3. Cover the bowl and refrigerate the dough for at least one hour, or up to 8 hours for best results.
  4. Preheat your oven to 350°F and prepare a baking sheet with parchment paper or a nonstick baking mat.
  5. Scoop out 2 tablespoons of dough and place onto the baking sheet, spacing the cookies about 2 inches apart.
  6. Bake for 10-12 minutes, or until the tops are set and the edges turn light golden brown.
  7. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a cooling rack. Repeat with the remaining batter until all cookies are made.
