Description

These Pumpkin Cheesecake Bars are a delightful treat featuring a creamy pumpkin filling nestled in a buttery graham cracker crust. Perfect for gatherings, they combine the richness of cream cheese with the warm notes of fall spices, making them a must-try for dessert lovers.

Ingredients

Scale
  • 18 sheets graham crackers, finely crushed
  • 8 Tablespoon unsalted butter, melted
  • 1/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • pinch of salt
  • 24 ounces cream cheese, room temperature
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 2 teaspoon vanilla extract
  • 3 large eggs
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, room temperature
  • 15 ounces pumpkin puree
  • 1/3 cup brown sugar, packed
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1/4 cup heavy cream
  • 1 Tablespoon cornstarch

Instructions

  1. Preheat the oven to 350°F (163°C) and line a 9×9-inch pan with parchment paper, allowing it to overhang at the edges for easy removal later.
  2. In a food processor, combine the graham crackers, brown sugar, and cinnamon; pulse until fine crumbs form.
  3. Drizzle the melted butter over the crumb mixture and pulse until blended and resembling wet sand.
  4. Press the crumb mixture evenly into the bottom of the prepared pan and bake for 10 minutes. Let it cool while preparing the filling.

Notes

Ensure cream cheese is at room temperature for easy mixing.
Feel free to add more spices if you enjoy a stronger flavor.
Chill the bars before slicing for cleaner edges.
