Description

These Plum Bars are a delightful treat, combining tender, buttery crust with sweet, juicy plums. They’re easy to make and perfect for anyone craving a homemade dessert!


Ingredients

  • 1 ¾ cup all purpose flour
  • ⅔ cup sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, cold
  • 1 egg, whisked
  • 2 tbsp milk
  • 4 plums, diced small
  • ¼ cup sugar
  • 2 tbsp all purpose flour
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 400°F and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt. Grate the cold butter into the bowl using a cheese grater.
  3. Combine the mixture with your hands until it resembles small pebbles. Add the egg and milk, stirring until combined.
  4. In a separate bowl, combine the diced plums with sugar, flour, and vanilla extract.
  5. Press ⅔ of the crust mixture into the bottom of the prepared baking dish.
  6. Spread the plum mixture evenly over the crust layer, then sprinkle the remaining crust mixture on top.
  7. Bake for 30-32 minutes until the edges are golden brown. Let the bars cool at room temperature before slicing.

Notes

For extra flavor, consider adding a pinch of cinnamon to the plum mixture.
Ensure the butter is very cold for the best texture in the crust.
These bars can be served warm or chilled.
