- 1 ¾ cup all purpose flour
- ⅔ cup sugar
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup butter, cold
- 1 egg, whisked
- 2 tbsp milk
- 4 plums, diced small
- ¼ cup sugar
- 2 tbsp all purpose flour
- ½ tsp vanilla extract
Instructions
- Preheat the oven to 400°F and line an 8×8 baking dish with parchment paper.
- In a large bowl, mix the flour, sugar, baking powder, and salt. Grate the cold butter into the bowl using a cheese grater.
- Combine the mixture with your hands until it resembles small pebbles. Add the egg and milk, stirring until combined.
- In a separate bowl, combine the diced plums with sugar, flour, and vanilla extract.
- Press ⅔ of the crust mixture into the bottom of the prepared baking dish.
- Spread the plum mixture evenly over the crust layer, then sprinkle the remaining crust mixture on top.
- Bake for 30-32 minutes until the edges are golden brown. Let the bars cool at room temperature before slicing.
Notes
For extra flavor, consider adding a pinch of cinnamon to the plum mixture.
Ensure the butter is very cold for the best texture in the crust.
These bars can be served warm or chilled.
