- 1 teaspoon brown sugar
- ice
- 2 ounces rum
- 2 ounces pineapple juice
- 1 ounce coconut milk
- ¾ ounce lime juice
- club soda
Instructions
- Add mint leaves and brown sugar to a cocktail shaker and muddle to release mint oils.
- Fill the shaker halfway with ice and pour in the rum, pineapple juice, coconut milk, and lime juice.
- Cover the shaker and shake vigorously for about 10 seconds until chilled and mixed well.
- Strain the mixture into a highball glass over fresh ice and top with club soda. Garnish if desired and serve immediately.
Notes
For a sweeter drink, adjust the brown sugar to taste.
