- 1 pound thick-cut bacon, (diced)
- 1 large yellow onion, (finely diced (about 1 ½ cups))
- 3 cups (495 g) fresh pineapple, (finely diced (about ½ of a medium pineapple))
- 2 teaspoons garlic, (minced)
- ½ cup (100 g) light brown sugar, (packed)
- ¼ cup (60 g) apple cider vinegar
- ¼ cup (79 g) maple syrup
- 1 teaspoon chili powder
- ¼ teaspoon kosher salt
- ¼ teaspoon red pepper flakes, (optional)
Instructions
- In a medium skillet over medium heat, cook the diced bacon until crispy, stirring occasionally. Line a plate with paper towels while the bacon cooks.
- Using a slotted spoon, transfer the cooked bacon to the lined plate, leaving about ¼ cup of bacon grease in the skillet and discarding the rest.
- Reduce the heat to medium-low. Add the diced onion to the skillet, cooking until softened and beginning to caramelize.
- Add finely diced pineapple to the skillet with the onion, cooking and stirring frequently until the pineapple releases its juices and begins to soften, about 10 minutes.
- Stir in the garlic and cook for about 30 seconds.
- Add light brown sugar, apple cider vinegar, maple syrup, chili powder, kosher salt, and optional red pepper flakes. Stir to combine.
- Return the cooked bacon to the skillet and mix everything together.
- Allow the mixture to simmer over low heat for 20 to 30 minutes, stirring occasionally, until thickened to a jam-like consistency. If too loose, continue cooking.
- Let cool slightly before serving. Serve warm or refrigerate and gently reheat before use.
