- ½ cup sugar
- 1 lemon, juiced
- ½ lemon, zest
Instructions
- Combine the diced peaches, sugar, lemon juice, and lemon zest in a large saucepan.
- Bring the mixture to a rapid boil, then reduce heat and boil for 20 minutes, stirring occasionally.
- Use a wooden spoon to help break down the peaches until the mixture thickens. It’s ready when the peaches stick to the back of a spoon.
- Pour the preserves into a large glass jar or smaller jars with sealed lids, and refrigerate. They can be stored for up to 2 months.
