Instructions
- Cube the peaches, peeling them if they are fresh. If using frozen peaches, thaw them first.
- In a medium saucepan over medium heat, combine the peaches, brown sugar, cinnamon, lemon juice, and cornstarch, stirring well.
- Heat the mixture until the peach juice separates and the contents come to a simmer.
- Continue to cook for 10 minutes, stirring occasionally, until the mixture thickens. Lightly mash about 20% of the peaches using a potato masher or similar tool. Cook for another minute before removing from heat. Let it cool completely before using.
