- 5 cups peaches, about 5–6 medium peaches, peeled and diced
- ⅓ cup light brown sugar
- 2 tablespoons granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ¾ cup old-fashioned oats
- ¾ cup all-purpose flour
- ½ cup packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon sea salt
- 6 tablespoons unsalted butter, melted
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (180°C). Line a 9 inch square baking pan with parchment paper, leaving overhang on two sides for easy removal.
- In a large bowl, combine the melted butter, sugar, and vanilla extract until mixed well.
- Add the flour and salt, then mix until a soft dough forms.
- Press the dough evenly into the bottom of the lined baking pan.
- Bake for 15 minutes, or until the edges turn lightly golden.
Notes
Ensure to peel the peaches, or leave the skin on if you prefer a more rustic texture.
These bars can be served warm with a scoop of vanilla ice cream for an extra treat.
