- 3 pounds ripe peaches, peeled, pitted, and cut into 8 pieces
- 2/3 cup white granulated sugar
- 2 tablespoons corn starch
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ¾ cup dark brown sugar, packed
- ¾ cup white all-purpose flour
- 2/3 cup old fashioned rolled oats
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ stick salted butter, cut into very small pieces
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a 9-inch baking dish with non-stick spray and set aside.
- In a large bowl, mix sliced peaches with sugar and toss to coat. Set aside.
- In another bowl, combine brown sugar, flour, rolled oats, cinnamon, and nutmeg.
- Add diced butter to the mixture and blend with a pastry blender or fork to create coarse crumbs.
- In the bowl of peaches, mix in vanilla, cornstarch, cinnamon, and salt. Toss to combine.
- Pour the peach mixture into the prepared baking dish.
- Spread the crumb topping evenly over the peaches.
- Bake for 45-50 minutes until the topping is golden brown and juices are bubbling around the edges.
- Remove from the oven and rest for 15 minutes before serving.
- Optionally, serve with vanilla ice cream and a sprig of mint.
Notes
Use ripe, juicy peaches for the best flavor.
Feel free to add a dash of lemon juice to the peaches for a hint of tartness.
