Ingredients
Scale
- 1 ½ cups sugar
- Zest from 1 navel orange
- ¾ cup butter, softened
- 3 eggs
- ½ cup milk
- ¼ cup orange juice
- ¼ cup applesauce
- 1 tsp vanilla
- 1 ½ cups all purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- ½ cup powdered sugar
- 2 tbsp orange juice
- ¼ tsp vanilla
Instructions
- Preheat the oven to 350°F and line a 9” cake pan with parchment paper; set aside.
- In a large bowl, combine the sugar and orange zest, then rub them together with your fingers until fragrant. Add the butter and beat until fluffy, about 1-2 minutes.
- Into the same bowl, mix in the eggs, milk, orange juice, applesauce, and vanilla until well combined.
- In another bowl, combine the flour, baking powder, baking soda, and salt.
- Pour the dry ingredients into the wet ingredients, gently stirring until just combined. Pour the batter into the prepared cake pan and bake for 50 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- For the glaze, whisk together the orange juice and vanilla, then stir in the powdered sugar until smooth. Pour the glaze over the cooled cake and smooth it out. Allow to set for a few minutes before slicing.
Notes
Make sure to use fresh oranges for the best flavor.
You can store the cake covered at room temperature for up to 3 days.
This cake can also be enjoyed without the glaze for a lighter option.
