- 4 ounces cream cheese
- 1 teaspoon salt
- ¼ cup parmesan cheese, plus more for garnish
- 3 cloves garlic, minced
- 1 can quartered artichoke hearts, drained (14 ounce)
- 8 ounces fresh spinach
Instructions
- Cut the chicken into 1-inch cubes and season with salt, pepper, and garlic powder.
- Heat a large skillet over medium-high heat. Once hot, add the olive oil and spread the chicken in a single layer. Cook for 3-4 minutes, then stir and continue cooking for another 3-4 minutes.
- Add the orzo, chicken broth, and heavy cream to the skillet. Stir and bring to a simmer. Cook for about 10-12 minutes or until the orzo is tender, stirring occasionally to prevent sticking.
- Stir in the salt, cream cheese, parmesan cheese, artichoke hearts, and fresh spinach. Cook until the spinach wilts and the cheese melts into the dish.
- Garnish with additional parmesan and fresh cracked pepper before serving.
Notes
For extra flavor, consider adding crushed red pepper flakes to the dish.
