Description

This No-Bake Watermelon Pie is a delightful summer treat combining watermelon Jell-O, cool whip, and fresh watermelon. Its easy preparation makes it a glorious addition to any summer gathering or a refreshing dessert to enjoy at home.


Ingredients

  • 1 (3.6-ounce) box watermelon-flavored Jell-O
  • ½ cup boiling water
  • ½ cup cold water
  • 1 (8-ounce) tub Cool Whip, thawed
  • 1½ cups diced seedless watermelon, blotted dry
  • 1 (9-inch) graham cracker pie crust
  • Watermelon slices and mint leaves for decoration (optional)

Instructions

  1. Stir the watermelon Jell-O into ½ cup of boiling water in a medium bowl until fully dissolved.
  2. Add ½ cup of cold water and stir. Allow it to cool on the counter for 10 to 15 minutes.
  3. Gently fold in the thawed Cool Whip until smooth, then add the diced watermelon to the mixture.
  4. Spoon the filling into the graham cracker crust and smooth the top.
  5. Refrigerate the pie for at least 4 hours until it's firm and set.
  6. Slice and serve chilled, optionally garnished with Cool Whip, watermelon cubes, or mint leaves.
  7. Store any leftovers covered in the fridge for up to 3 days, but avoid freezing.
