Instructions
- Stir the watermelon Jell-O into ½ cup of boiling water in a medium bowl until fully dissolved.
- Add ½ cup of cold water and stir. Allow it to cool on the counter for 10 to 15 minutes.
- Gently fold in the thawed Cool Whip until smooth, then add the diced watermelon to the mixture.
- Spoon the filling into the graham cracker crust and smooth the top.
- Refrigerate the pie for at least 4 hours until it's firm and set.
- Slice and serve chilled, optionally garnished with Cool Whip, watermelon cubes, or mint leaves.
