- 1/2 cup high-protein plant-based yogurt or skyr, 135g
- 2 tsp orange zest
- 1/2 cup freshly squeezed orange juice (about 1–2 navel oranges)
- juice of 1 lime or 2 tbsp extra orange juice
- 2 tbsp agave syrup
- 1 tsp dominican vanilla or vanilla paste/extract
- 1/4 tsp kosher salt
- 3/4 cup non-dairy evaporated milk
- 1/3 cup chia seeds, 57g
- 3 tbsp rolled oats, 16g
- 2–3 pitted medjool dates, 40g
- 2 tbsp coconut flakes, 8g
- 2 tbsp raw cashews, 16g
- 1 tsp orange zest
- 1/2 tsp dominican vanilla or vanilla paste/extract
- 1/4 tsp kosher salt
Instructions
- Blend yogurt, orange zest, orange juice, and lime until smooth.
- Add agave syrup, vanilla, and salt, then blend again while adding evaporated milk gradually.
- Stir in chia seeds, cover, and refrigerate for 10 minutes, then stir again and refrigerate overnight.
- Pulse oats, medjool dates, coconut flakes, cashews, orange zest, vanilla, and salt in a food processor until crumbly.
- Serve chia pudding topped with the crumbly mixture.
Notes
For extra sweetness, adjust the amount of agave syrup as desired.
Chia pudding can be prepared a day in advance for a quick treat.
Store any leftover crumble mixture in the fridge for later use.
