- 1 cup andes creme de menthe baking chips

- ½ cup milk
- 4 cups powdered sugar
- ½ teaspoon peppermint extract
- 1 drop green food coloring
- ¾ cup mini semi-sweet chocolate chips
Instructions
- Preheat your oven to 400°F (200°C) and line a 13×9 baking dish with parchment paper.
- For the brownies, melt the unsalted butter, cocoa powder, and vegetable oil together in a saucepan over medium-high heat. Whisk continuously until boiling, then remove from heat.
- In a separate bowl, beat the granulated sugar, eggs, and buttermilk together. Gradually stir in the melted butter mixture without overmixing.
- Add in the all-purpose flour, baking soda, and kosher salt, mixing gently until just combined. Fold in the Andes creme de menthe baking chips.
- Pour the brownie mixture into the prepared baking dish and bake for 20 minutes. Afterwards, take them out and let them cool.
- To prepare the frosting, beat the softened butter in a large bowl using an electric mixer for 3-4 minutes until pale.
- Mix in the milk, powdered sugar, peppermint extract, and green food coloring. Beat for an additional 3-5 minutes until light and fluffy, adjusting consistency with more milk if needed. Finally, fold in the mini chocolate chips.
- Spread the frosting over the cooled brownies and refrigerate for 2 hours to set. Cut into pieces and enjoy!

For an extra minty flavor, add more peppermint extract to the frosting.
