- ¾ cup (178.5 g) heavy whipping cream
- ½ cup (8–10 whole) sun-dried tomatoes, soaked in hot water, drained, & chopped
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon crushed red pepper flakes
- ⅓ cup (33 g) grated parmesan cheese
- 3 cups rotisserie chicken, shredded
- 1 package (12 count) king’s hawaiian sweet rolls
- ½ cup (15 g) fresh baby spinach
- 1 cup (113 g) monterey jack cheese, shredded
- ¼ cup (½ stick / 57 g) unsalted butter, melted
- 1 teaspoon garlic, minced
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 350°F (175°C). Prepare a 7×11-inch baking dish by spraying it with nonstick cooking spray and set aside.
- In a large bowl, combine the heavy whipping cream, sun-dried tomatoes, garlic powder, kosher salt, black pepper, crushed red pepper flakes, and grated parmesan cheese.
- Add in the shredded rotisserie chicken and mix well until everything is evenly combined.
- Slice the King's Hawaiian sweet rolls in half without separating them. Place the bottom half in the prepared baking dish.
- Spread the chicken mixture evenly over the bottom half of the rolls, then layer with fresh baby spinach and shredded Monterey Jack cheese.
- Top with the other half of the rolls and brush melted unsalted butter mixed with minced garlic over the top.
- Sprinkle chopped fresh parsley on top for garnish.
- Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 to 15 minutes until the cheese is bubbly and the rolls are golden brown.
