Ingredients

  • 2¼ cups flour
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1¾ sticks butter (softened at room temperature)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 large eggs (at room temperature)
  • ⅓ cup heavy cream
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon granulated sugar
  • 2 tablespoons heavy cream
  • powdered sugar or chocolate ganache

Instructions

  1. Preheat your oven to 350°F and line a 9×5-inch loaf pan with parchment paper.
  2. In a small bowl, whisk together the flour, cornstarch, and baking powder, then set aside.
  3. Beat the softened butter until creamy, then add the sugar, vanilla extract, and salt, beating for 2–3 minutes until fluffy.
  4. Incorporate the eggs one at a time, mixing on high speed for 30–60 seconds after each egg is added.
  5. Gradually add the flour mixture and heavy cream to the batter, alternating between the two until smooth.
  6. Pour about ⅔ of the batter into the prepared pan, smoothing the top. Then mix the remaining batter with cocoa powder, extra sugar, and cream. Spread this over the vanilla layer and swirl gently with a knife or fork.
  7. Bake at 350°F for 55–60 minutes or until a toothpick comes out clean from the center.
  8. Let the loaf cool in the pan for 10 minutes on a wire rack, then remove and cool completely before serving. Top with powdered sugar or chocolate ganache.

Notes

Make sure all ingredients are at room temperature for the best results.
You can substitute heavy cream with whole milk if needed.
Ensure to not overmix the batter after adding the eggs to keep the cake light.
