Leprechaun Pistachio Fudge is a delightful no-bake treat made with white chocolate, Irish cream, and crunchy pistachios. Perfect for satisfying your sweet cravings quickly!

- 3 ½ cups white chocolate chips (22–24 ounces)
- 14 ounces sweetened condensed milk
- ¼ cup irish cream
- 1 cup shelled pistachios roughly chopped
Instructions
- Line an 8-inch × 8-inch baking dish with parchment paper or tin foil, allowing the edges to hang over for easy removal later.
- In a microwave-safe bowl, heat the sweetened condensed milk for 1 minute.
- In a large glass bowl, combine the white chocolate chips and pour the warm condensed milk over them. Let set for 1 to 2 minutes before stirring until fully melted and smooth. If needed, microwave for an additional 15 seconds, then stir again.
- Stir in the Irish cream until fully incorporated. Mix in 3/4 of the chopped pistachios until combined.
- Pour the fudge mixture into the prepared baking pan, spreading evenly. Sprinkle the remaining pistachios on top, pressing them gently into the fudge.
- Refrigerate for 3 to 4 hours until firm. Once set, lift the fudge out of the dish using the overhanging parchment or foil, and cut into 25 squares. Store in an airtight container in the fridge.
Notes
Ensure the lined parchment paper or foil allows for easy removal of the fudge.
Customize with additional toppings like chocolate drizzle if desired.
