Lentil Bruschetta features a delicious blend of green lentils, feta, and herbs atop crispy bread. This easy and healthy meal is perfect for a satisfying snack or appetizer!
Ingredients

- 1 ½ cup (1 can) cooked green lentils, drained
- ¼ cup crumbled feta
- 3 tablespoons chopped parsley
- 2 tablespoons chopped onion
- 1 tablespoon extra virgin olive oil, plus more for drizzling
- ½ tablespoon lemon juice
- ¼ teaspoon salt, or to taste
- ⅛ teaspoon pepper, or to taste
- 6 slices of ciabatta or artisanal bread
Instructions
- In a salad bowl, mash half of the cooked lentils with a fork or spoon.
- Mix in feta, parsley, onion, olive oil, lemon juice, salt, and pepper until well combined.
- Preheat your oven to 200°C (400°F) and arrange sliced bread on a baking tray.
- Toast the bread in the oven for about 5 minutes until golden and crispy, keeping an eye on it.
- Alternatively, toast the bread in a skillet or toaster.
- Spread a generous amount of lentil dip on each slice of toasted bread.
- Optionally, rub each slice with a garlic clove before serving. Enjoy!
Notes
For added flavor, use fresh herbs or spices.
