  • 1/4 cup diced shallot
  • 1 cup jasmine rice
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups low sodium chicken broth
  • zest of a lemon
  • 2 tablespoons fresh lemon juice
  • 12 tablespoons chopped fresh dill

Instructions

  1. Heat the olive oil in a saucepan over medium-high heat.
  2. Add the diced shallot and sauté for 30 seconds.
  3. Stir in the jasmine rice, garlic powder, and salt, toasting for another 30-60 seconds.
  4. Pour in the chicken or vegetable broth along with the lemon zest; stir and bring to a boil.
  5. Once boiling, cover the saucepan and reduce heat to low. Cook the rice for 15-20 minutes.
  6. Remove from heat and let stand, covered, for an additional 5-10 minutes.
  7. Stir in the fresh lemon juice and chopped dill, tasting for seasoning and adding more salt if needed.

Notes

For extra flavor, consider using homemade chicken broth.
You can adjust the amount of dill according to your personal preference.
