Description
This Chocolate Meringue Pie stands out with its rich chocolate flavor, creamy filling, and delightful meringue topping, making it an ideal sweet treat for gatherings and special occasions.
Ingredients
Scale
- 1 pie crust
- 1 cup granulated sugar
- ⅓ cup cornstarch
- 2 tablespoons cocoa powder
- ¼ tsp salt
- 2 ¾ cups whole milk
- 4 large egg yolks
- 6 oz bittersweet chocolate
- 2 tbsp unsalted butter
- 1 ½ tsp vanilla extract
- 4 large egg whites
- ¼ tsp salt
- ½ tsp cream of tartar
- 2/3 cup granulated sugar
- ½ tsp vanilla extract
Instructions
- Roll out your pie dough and fit it into a 9-inch pie dish. Trim and crimp the edges as desired. Chill in the fridge for 30 minutes (or freezer for 15) to prevent shrinking.
- Use a fork to prick the base of the crust all over to help prevent puffing. Line the crust with parchment paper or foil, ensuring it covers the bottom and sides. Fill with pie weights, dried beans, or sugar.
- Bake at 375°F for 20 minutes.
- Carefully lift out the parchment and weights, then return the crust to the oven. Bake uncovered for an additional 10–15 minutes, or until the bottom looks dry and lightly golden brown. Allow to cool completely before adding the filling.
Notes
Ensure the egg whites for the meringue are at room temperature for best results.
For a richer flavor, consider using dark chocolate in the filling.
Keep the pie refrigerated until serving to maintain the meringue’s texture.
