- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1 cup bbq sauce
- 1/4 cup honey
- 1 cup long grain rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 head romaine lettuce, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup pickled onions
- 1/4 cup chopped cilantro
- 1/4 ranch dressing
Instructions
- Cook the rice according to package instructions.
- In a skillet, heat olive oil over medium heat.
- Season chicken breast with salt, pepper, paprika, and garlic powder.
- Cook the chicken in the skillet until fully cooked.
- Remove the chicken and add BBQ sauce and honey to the skillet, mixing well.
- Return the chicken to the skillet and coat with the sauce mixture.
- Assemble the bowls with rice at the base, followed by the chicken, black beans, corn, lettuce, cheese, pickled onions, cilantro, and ranch dressing.
Notes
Feel free to adjust the BBQ sauce and honey based on your taste preference.
You can substitute chicken with other proteins like tofu for a vegetarian version.
