Instructions
- Preheat the oven to 350°F and line a muffin tin with silicone liners or grease it if using a nonstick tin.
- In a large bowl, combine the wet ingredients: applesauce, milk, maple syrup, and vanilla extract. Mix well.
- Add the dry ingredients: rolled oats, cinnamon, nutmeg, baking powder, and salt. Stir until combined before incorporating the diced apples.
- Using a large cookie scoop, fill the muffin tins with the batter. The mixture may be quite wet, so don’t worry if you need to shape the muffins a bit.
- Bake for 25-28 minutes or until the tops are golden brown. Let cool before sprinkling with cinnamon if desired.
