  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 cups diced granny smith apples, peeled, divided
  • ¼ cup avocado oil
  • ½ cup packed light brown sugar
  • 1 cup cottage cheese, 4%, blended smooth
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat the oven to 425°F and line 6 wells of a standard muffin tin with paper liners, spacing them out.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg until no streaks remain.
  3. Add 1.5 cups of diced Granny Smith apples to the dry ingredients and toss to coat lightly with flour.
  4. In a separate bowl, whisk together avocado oil, brown sugar, blended cottage cheese, eggs, and vanilla until smooth.
  5. Pour the wet mixture into the dry ingredients and fold until just combined.
  6. Fill each muffin liner to the top with batter, about 4-6 tablespoons per well.
  7. Mix the topping brown sugar and cinnamon in a small bowl and sprinkle over the muffins, adding reserved apples on top.
  8. Bake for 5 minutes at 425°F, then reduce temperature to 350°F and bake for 13-18 minutes until a toothpick comes out clean.
  9. Cool muffins in the tin for 5-10 minutes before transferring them to a wire rack.
  10. Optionally, mix powdered sugar and milk to drizzle over cooled muffins.
