Description

This Guinness Beef Stew offers an irresistible combination of savory flavors, featuring tender beef, aromatic vegetables, and rich Guinness beer, all prepared easily in your slow cooker. A true satisfaction for comfort food lovers seeking a quick and delectable meal.


Ingredients

  • 2 tbsp olive oil
  • 2.5 lb / 1.25 kg beef chuck, boneless short rib or any other slow cooking beef
  • 3/4 tsp each salt and black pepper
  • 3 garlic cloves, minced
  • 2 onions, chopped (brown, white or yellow)
  • 6 oz / 180g bacon, speck or pancetta, diced
  • 3 tbsp flour (all purpose/plain)
  • 440ml / 14.9 oz guinness beer
  • 4 tbsp tomato paste
  • 3 cups (750 ml) chicken stock/broth
  • 3 carrots, peeled and cut into 1.25 cm / 1/2″ thick pieces
  • 2 large celery stalks, cut into 2cm / 1″ pieces
  • 2 bay leaves
  • 3 sprigs thyme (or substitute with 1 tsp dried thyme leaves)

Instructions

  • Cut the beef into 5cm/2" chunks and dry them with a paper towel. Season with salt and pepper.
  • In a heavy-based pot, heat olive oil over high heat. Brown the beef in batches, removing each batch to a plate after browning.
  • Lower the heat to medium. If the pot looks dry, add more oil.
  • Add minced garlic and chopped onions to the pot, cooking for about 3 minutes until softened, then mix in the diced bacon.
  • Continue cooking until the bacon is browned. Then, add in the chopped carrots and celery.
  • Stir in the flour, cooking for 1 minute to remove the raw flour taste.
  • Pour in the Guinness, chicken stock, and tomato paste, stirring well to combine and ensure the flour dissolves. Add bay leaves and thyme.
  • Return the browned beef along with any juices back into the pot, ensuring the liquid covers the meat.
  • Cover the pot, reduce the heat, and simmer gently for about 2 hours until the beef becomes tender. Remove the lid and simmer for an additional 30-45 minutes until the sauce thickens and the beef is fork-tender.
  • Skim off any fat from the surface if desired. Adjust seasoning with salt and pepper, and remove bay leaves and thyme before serving.

Notes

This dish pairs wonderfully with creamy mashed potatoes for an authentic Irish experience.
Feel free to substitute the Guinness with a non-alcoholic stout for a similar deep flavor.
For a gluten-free option, use gluten-free flour and ensure the broth is gluten-free.
