Description
Grilled Rosemary Chicken combines simple ingredients like olive oil, fresh rosemary, and lemon juice for a delicious meal. Perfect for a quick, healthy dinner!
Ingredients
Scale
- 4 tablespoons extra-virgin olive oil
- 2 tablespoons finely chopped fresh rosemary leaves
- 1 ½ tablespoons lemon juice, from ½ lemon
- 1 tablespoon dijon mustard
- 1 tablespoon worcestershire sauce
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 2 – 2 ¼ pounds boneless skinless chicken breasts
Instructions
- In a small bowl, whisk together olive oil, chopped rosemary, lemon juice, Dijon mustard, Worcestershire sauce, kosher salt, and black pepper until combined.
- Place chicken breasts in a zippered bag and pour the marinade over them. Massage the bag to ensure chicken is evenly coated and refrigerate for 1 hour to overnight.
- Prepare the grill for high heat, targeting 400°F to 450°F. Clean the cooking grates; no need to oil them due to the marinade.
- Place chicken on the grill and cook for 5 to 6 minutes without moving until they release easily from the grates. Flip the chicken and cook for another 4 to 5 minutes with the lid closed. Ensure the internal temperature reaches 155°F.
- Move chicken to a platter, tent with foil, and let rest for 5 minutes before serving.
Notes
Letting the chicken marinate for longer enhances the flavor.
Ensure the grill is hot enough before placing the chicken to get a nice sear.
Using a meat thermometer helps ensure the chicken is cooked perfectly.
